Ingredients
1 med sweet potato cut into cubes
20g olive oil
50g vegan halloumi cheese
25g tomatoes
25g cucumber
50g mixed salad leaves
Salt and pepper to taste
Directions:
- Preheat the oven to 1800C
- Place the cubes of sweet potato on a baking tray and drizzle with the olive oil bake for 20 minutes until golden and crunchy.
- Slice the halloumi cheese, tomatoes and cucumber and add to the mixed leaves top with the cooked sweet potato.
- Serve warm.
