Ingredients
300g jack fruit drained
1 red pepper
1 carrot
1 bunch of spring onions
100g baby corn
50g bean sprouts
1 medium courgette
50g hoisin sauce
1 vegetable stock cube
1 tsp Chinese five spice
1 tsp garlic puree
1 tsp minced ginger
25g oil
Directions:
- Dain the jackfruit from the tin and chop it into small chunks.
- Slice the red pepper thinly and slice the carrot and courgette into ribbons with a potato peeler.
- Chop the baby corn into bite-size pieces and slice the spring onions.
- In a jug, poor half a pint of boiling water and crumble in the stock cube, stirring to dissolve.
- Add the hoisin sauce to the jug and set to one side.
- In a wok or large frying pan, heat the oil over medium to high heat before adding all the vegetables – stir fry for a few minutes.
- Add the garlic, ginger, and five-spice to the wok and cook for 1 more minute.
- Poor over the sauce and allow it to come to a boil.
- Serve with rice or noodles
