Ingredients

1 med sweet potato cut into cubes

20g olive oil

50g vegan halloumi cheese

25g tomatoes

25g cucumber

50g mixed salad leaves

Salt and pepper to taste

Directions:

  1. Preheat the oven to 1800C
  2. Place the cubes of sweet potato on a baking tray and drizzle with the olive oil bake for 20 minutes until golden and crunchy.
  3. Slice the halloumi cheese, tomatoes and cucumber and add to the mixed leaves top with the cooked sweet potato.
  • Serve warm.
